Our Partners and Suppliers

A cafe serves the public – but what about the organizations behind the scenes that serve the cafe? We wanted to highlight the partners we carefully selected to bring you the greatest coffee and pastry experience in Shippensburg, PA.

All of our ingredients for our house-baked pastries are either Non-GMO or organic. This applies to the very wheat berries we source to grind our own wheat. 

We have a multi-roaster coffee program, carrying coffees from 4-6 different coffee roasters, each for a specific reason. 

On espresso – arguably the backbone of every contemporary coffee program – we will be showcasing a beautiful Costa Rican coffee from the Turrialba region roasted by Lore Coffee Roasters all the way from Bonner’s Ferry Idaho! Nicholas and Graysen started Lore 2 years ago after meeting at their local Orthodox Christian church.  Nicholas has over 8 years of experience in the specialty coffee industry, and as head roaster, he has chosen a custom coffee and roast for us. 

For our flagship filter coffee (“black coffee”) we are brewing coffee roasted by Burning Bush a.k.a the Orthodox Christian monks at St. Tikhon’s Monastery in South Canaan, PA.

 

We also will feature a year-round blend by Lore Coffee Roasters called “The Long Bridge” on filter batch brew. Delicious on its own or with milk, this chocolatey and well balanced coffee is approachable, comfortable and boasts of beans that are organically grown in South America. Roasted slightly “longer” (hence the name) than other roasts from Lore, this coffee captures the meeting place between traditional and contemporary coffee cultures – a true bridge. 

All of our loose leaf teas are sourced through Passenger Coffee from Lancaster, PA. Their approach to business and quality of coffee is extremely impressive, and their tea is no exception. 

 

 

 

Our other core coffee partner is Little Wolf Coffee in Ipswich, MA. When our manager was in college and first fell in love with coffee, the owners at Little Wolf were instrumental in educating him on the concept of the ‘omniroast‘ – the idea that any coffee, if roasted correctly, can highlight the unique terroir of the region from which it comes on any brew method (espresso, or filter). Coffee doesn’t have to be roasted ‘dark’ to be enjoyable – in fact, its sometimes the exact opposite! Little Wolf Coffee has grown to be a nationally recognized company in the industry (Food and Wine agrees) and many of their offerings will be featured on our Hand Pour menu, as well as their decaf coffee. 

We will be serving selections of Passenger Coffee‘s exclusive lots on Hand Pour, alongside Little Wolf and Lore Coffee. The menu will always be rotating with seasonal availability, but we will have Gesha varietals, and strive to present different processing methods from many regions around the world.

 

For Decaf coffee we use a “Mountain Water Process Decaf” roasted by Chambersburg’s Denim Coffee.
